What would have happened if Eve was not tempted by the serpent in the Garden of Eden?
What a awesome question. I’m grateful for the opportunity to answer this. I’ve been glancing at this question for a long time pondering the answer.
If Adam and Eve Never Ate the Fruit. They would have never been Separated From GOD! And The thing that Separates us from GOD in the first place, Is Sin.
In the Bible, When GOD Says “If you eat the fruit you will surely Die" When Eve ate the fruit..She Didn't die at that very moment when she ate it..But in the spirit..She was Separate from GOD, Which means she was under the covenant, And Judgement. She was Dead in the Spirit.. She lacked knowledge of the Outcome..Which still happens till this day.
Which means, The tree of knowledge of Good and Evil, Was a Cursed Tree that was of Satan himself, There was a Tree of LIFE that was Of GOD, And A Tree of Knowledge Of Good and Evil which was of Satan. Which is why Satan himself Decieved Eve into eating the Fruit off the tree to begin with..So that humanity can be separated from GOD, How? By opening the door for Satan to take control of Humanity and Not GOD.
The reason GOD Allowed the Tree of Knowledge of good and evil was Because of Freewill. God created Darkness And Light and Separate it from each other, But he never created Sin, For he is HOLY.
So if Eve Never Ate the Fruit, We would all still be connected with GOD.

The list could be extensive. This is by no means exhaustive but here are some things that should suffice for now:
Eve would have made God’s heart rejoice at her decision to willingly obey him by not eating of the tree of the knowledge of good and bad, thereby being granted to eat of the tree of life instead. - Genesis 2:9; 3:22; Proverbs 27:11
Eve would not have had the increase in birth pangs as a result of her disobedience. - Genesis 3:16
Eve would not have learned about the abusive dominance that God foresaw would befall womankind in future days. - Genesis 3:16
Eve would not have had to experience the intense agony of a child of hers being murdered - and by another one of her children at that. - Genesis 4:1, 2, 8, 25
Eve would not have had to watch her husband grow from a vibrant, healthful, perfect man to deteriorating into a sinful, decrepit, dying man - possibly experiencing (though not stated) the actual death of Adam, who was her husband for centuries, and from whom she had been taken directly. - Genesis 2:22, 23; Genesis 5:3–5.
Then when they started having children their progeny would be perfect and we'd now have an Earth full of loving caring people on the Earth who could potentially live for eternity. God and his Kingdom under the direction of his Son Jesus Christ will soon put it right . Daniel 2:44.
Eve would’ve brought forth perfect children, without sin, without sickness and illness, and without any fear of eventual death. We, today, would not have inherited that from our first parents. - Romans 5:12; 6:23
Eve would still be alive today, and in perfect health and happiness herself, being able to enjoy the unique position she alone would have had with the rest of us, which would’ve no doubt come from being known as “the mother of all those living.” - Genesis 3:20
Eve would’ve enjoyed a continued relationship with God in a direct way without a mediator. - 1 Timothy 2:5, 6
Jesus would not have been needed to be sent to redeem sinful mankind in order to give us back the prospect of everlasting life. - John 3:16
Then at God's appointed time, they would have been allowed to partake of the tree of life.
They would not get sick, grow old, or die, they would have extended the boundaries of Eden until the whole earth was a paradise.
They would still be alive today, enjoying perfect health & happiness, & all of their descendants ( us) would also be enjoying perfect health & happiness without end.
God's original purpose hasn't changed, soon —
“The righteous will possess the earth, And they will live forever on it.” Psalm 37.29.
If Eve hadn’t eaten the fruit of the tree of the knowledge of good and evil - not an apple - Adam wouldn’t have had any excuse for eating it himself, because he couldn’t blame it on Eve, so he probably wouldn’t have eaten it himself:
The man answered, "That woman, the one you gave me, gave me some fruit from the tree, and I ate it."—Genesis 3:12 (GWT)
On the other hand, if Adam hadn’t planned on setting up Eve to take the blame, he would have either explained to her that the serpent was lying before she ate, or if he wasn’t there, (Bible versions disagree about that), he would have explained it to her afterward and begged God to forgive her.
That’s because he wasn’t the one who was fooled:
Besides that, Adam was not deceived. It was the woman who was deceived and sinned.—1 Timothy 2:14 (GWT).
As the Scripture says, "...for in the day that you eat from it you will surely die." Genesis 2:17.
The discrepancy here is not in the timing of death, but in the type of death. Although physical death surely came, the immediate death spoken of is not physical but spiritual. When we use the word death (in every context) there is always the connotation of separation. In physical death, the person's spirit and soul becomes separate from the body and from this world.
So back to context of Adam and Eve in the Garden, what happened there? Adam lived 910 years, so we know it did not mean physical death. Yet, in the very day they ate of the forbidden fruit, they died spiritually. They were separated from God.
So we had a conundrum that only God could solve. God, being an ever loving God, wanted a relationship with mankind. Yet, being a holy God, He cannot accept man's sin. So unless God takes extreme measures, all of mankind was doomed. This is why Jesus had to die, as the famous verse of Scripture states, “For God so loved the world, that He gave His only begotten Son, that whoever believes in Him shall not perish, (or die spiritually) but have eternal life." John 3:16
When you repent and commit your life to Christ, Christ comes in and lives His life in and through you. As the Scripture states, "... it is no longer I who live, but Christ lives in me..." (Galatians 2:20)
